“Does the law require us to undertake food hygiene training ?”
The Food Safety (General Food Hygiene) Regulations 1995 state: “The proprietor of a food business shall ensure that food handlers engaged in the food business are supervised and instructed and/or trained in food hygiene matters commensurate with their work activities.”
Evidence of the training delivered to food handlers is something that an Environmental Health Officer would expect to see when carrying out an inspection of food premises.
Clearly a nationally recognised qualification in food hygiene is something that readily demonstrates such training has taken place.
Catering Workers Hygiene Survey
In 2002 the Food Standards Agency commissioned a Catering Workers Hygiene Survey. Amongst its findings the following facts came to light …
• more than a third of staff (39%) are neglecting to wash their hands after visits to the lavatory whilst at work.
• half of all those interviewed (53%) did not appear to wash their hands before preparing food.
• less than two thirds (59%) of the catering workers questioned had a certificate in basic food hygiene.
